9 tortillas fajita size, cut in half ▢1 pound lean ground beef ▢2 tablespoons taco seasoning ▢1 (15-ounce) can black beans, drained and rinsed ▢2 cups red enchilada sauce ▢1 cup onion, diced ▢1 cup frozen corn ▢2 cups cheddar cheese, shredded For the Toppings: ▢½ cup tomatoes, diced ▢3 tablespoons cilantro, chopped

Instructions STEP - 1

Onions and minced beef are browned in a large skillet. Remove any excess fat. Taco seasoning, black beans, and frozen maize should be combined.  

STEP - 2

Preheating the oven to 350 degrees Fahrenheit. Coat a 9-by-13-inch baking dish with oil before adding a quarter cup of the enchilada sauce.    

STEP - 3

On the bottom, layer three tortillas, one-half of the meat, approximately one-half cup of cheese, one-half cup of enchilada sauce, and three more tortillas. Proceed, concluding with three additional tortillas, the residual enchilada sauce, and cheese.    

STEP - 4

Bake covered for twenty-five minutes. Continue baking for an additional 5 minutes, or until the cheese has completely dissolved and started to brown.  

STEP - 5

Slicing the casserole after 5 to 10 minutes of resting is recommended. Sour cream, tomatoes, and cilantro are used as garnish.
